If your snail cam is hitting the bottom of the shock then you have the snail cams on inside out?
Turn them around so you turn anticlockwise to tighten the chain on the right side and clockwise on the left.

Nope, they are that way round and both the same way round (except my chain is on the left of the bike), it hits the shock mount on one side about three notches off fully loose and not on the other. Presumably because the shock mounts aren't both in exactly the same place.

Just checked my 2004, 350 Bullet. On the right side I reckon the axle would reach the end of the swing arm plate before the snail cam plate hit the shock bolt. That's turning it clockwise to tighten the chain.

I ignore the "standard" marks when adjusting the chain. I set the tension, straighten the wheel alignment against the front wheel using my plank then fine tune the adjusters. I've made my own datum/straight mark on each plate so next time I need to tighten the chain a notch I know where to go.

On the picture above you problem seems to be your chain is too tight. Some one has took out a link to many. Your brake plate slide should not be up to its limit like that and your snail cam would be further back making it operational.

About half way in its travel.

My chain is absolutely fine, 102 links, standard length. I have a 19 tooth front sprocket that moves the rear wheel a little further forward than the standard 18 .
The brake backplate bolt has plenty of space to move even further forward if required.
Plus the snail cam is on the 15th notch.
I run my chain slacker than recomended, around two inches of slack on the centre stand.
No problems at my end.🏴󠁧󠁢󠁳󠁣󠁴󠁿
