can anyone recommend weight and type/brand of oil to use in this GT 250 1965 , I am changing engine and gearbox oil thanks

Oils have improved, a lot, since the bike was made. It has a unit engine with a wet clutch so you will need a JASO MA bike oil. I see no reason not to use the best modern oils, such as Mobil 1 Racing 4T Motorcycle oil, available in many grades, pick the correct grade.

Yes, 20/50 will do in the gearbox (and in the chaincase)
