If you have the original 00 grease in at the moment I would put some engine oil in as well and take it for a good long run to soften the grease. Even then you won't get it all out as it's pretty tenacious stuff. You would then need to flush out with parafin to get the rest out but I wouldn't bother. With unsealed bearing I would replace with the same grease. A magnetic sump plug is a good upgrade as it gives a good idea of any problems in the 'box. I put a dollop of black moly in as well which seems to help the gearchange action as well as making the grease a little more fluid. Some people get away with 120 gear oil but with unsealed bearing there's always a risk of leakage.
Classic C5 Euro 4 at the moment.
