Adrian: a thought for you. If you kept the see-through jar insulated/heated, how much condensate do you think would collect there?
It is there mainly because it has been allowed to cool.
But why do you want to collect the condensate?
I know quite a few people have reinstated the old breather off the side of the crankcase, as you have done, but I prefer the vent off the top of the oil tank. When the breather pipe is correctly installed off the oil tank; straight up and away, no dips or loops (S1a & S11 Inter...), any oil droplets that are carried up the vent pipe collects on the sides of the pipe and simply drains back into the tank, while the higher volatiles and water are continually being distilled and blown out. All the post 2003 Bullets with the vent out of the top of the oil tank, ‘breathe’ just fine once the pipes are correctly rerouted to eliminate all the dips. And the internal ‘duck-bill’ breather in the old catch-can functions better at higher rpm, than the valve you have installed, due to less mass…
With the vent off the side of the motor the fume is potentially laden with oil-mist, and is in a high velocity stream. The moment it arrives at your cooled ‘diffuser’ the oil and water condense and drop out of suspension.
What is your oil consumption?
