No problem at all most insurers are quite happy to give fire and theft insurance for vehicles in storage.

Yes, several years back, I rode my Enfield for nearly two years without possessing a driving licence. Strangely enough, I discovered that I was able to insure the bike. I don't exactly recall why I did insure it, if I was illegally riding it anyway. Possibly to evade detection from any remote police computer check ups or something. Anyway, I am happy to report that nowadays all is sorted and totally legal.
