Hi we have a 1968 750cc working on, it sterts & runs nice no smoke from exhaust, but the oil is blowing up the breather pipe its not over filled with oil any thoughts

I'd be checking the scavenge pump first up if it is a Series 1A

Chipper, sounds like a 1A as Norm says. Oil level is quite critical on these bikes, your dipstick may or may not have any lines on, either way, you need to run at about half way up the stick. Do not put in the full quantity as stated in manual or overfill "just in case" or the bike will simply blow it out. The pipe should run vertically up from the crankcase fitting then along the bottom of the seat and exit over the rear number plate. It is normal to see a little oil dancing in the bottom of the pipe now and then!
