I have year 2000 350 bullet , and I am my confused over the 2 position ignition switch when reading the schematic.

The drawing show one normally open contact in off position and one normally closed contact ?

My drawing shows red/ black wire to black is open circuit when the ignition switch is in the ON position, is this correct?

Yes.

The black is an earth, the red/black is connected to the ignition coil. In the "Off" position, the spark is earthed to stop the engine.
