Seems to me that the change to EFI technology has made the problem of getting a decent mechanic worse. Carburetor models are easy to work on and most owners can pretty much look after their machines themselves. EFI is a whole new ballgame (I admit I don't understand it, but then I haven't needed to yet)
I suspect the older "traditional" mechanic is in the same situation to some extent. The modern technicians who do understand it are perhaps not so used to the older machines (or, indeed, don't even have the spanners)

Mark M, to get to London from West Cornwall to do a course is totally impractical as well as prohibitively expensive.

Papasmurf, you wrote: "I was shocked to find out from a motorcycle mechanic that there is not one training course available in the UK specifically aimed at servicing/working on motorcycles." My reply was to show that there are actually courses available. I did also point out that it is not accessible to all due to location. However, being in London does make it accessible to a large part of the UK population. I think there used to be one in Manchester as well but not sure where.

There are lots of apprentice schemes run by the major manufacturers. Granted, these will likely produce technicians instead of mechanics but that's the way the whole motor industry is going.
